Upcoming Event Schedule
In just the first full month of competing on the Summer rib cook-off circuit, Old Carolina has already added three wins to our continually growing championship tally. We’ve beaten some of the best barbecue “ribbers” in the country and we’re fired up and ready for more. Here are the awards we’ve snagged so far:

At the end of this month, we’ll face more stiff competition at the Charleston RibFest in West Virginia. If you get a chance to attend the event, stop by Old Carolina. We’d love to see you!
Once the RibFest is over, there will be no rest for the weary because the Pro Football HOF Rib Burn-off starts just three days later! This year we’ll be vying for our eighth consecutive People’s Choice award and we can’t do it without our loyal fan base. When you visit the burnoff this year, stop out to the OC pit and listen to the old-school funk, dance with the grill team and taste the ribs off our most seasoned smoker, Peaches. For the last nine years of competition, Peaches was responsible for most of our awards and when you try her ribs, you’ll know why.

OCBC wins “Best Barbecue” on Fox 8’s Hot List
While it sure is nice to beat ribbers from all across the country at burnoffs, it is also very satisfying whenever we can earn a local award for a competition against other great restaurants in Northeast Ohio. Thank you to everyone who logged on and voted Old Carolina Barbecue Company The Best Barbecue! We appreciate it very much and we’ll work diligently to maintain the standard of excellence our customers expect. |

“Off the menu” Recipe of the Month
Pulled Pork Quesadilla
Sometimes great recipes are created out of necessity. This particular recipe was born when trying to find a creative way to utilize left over pulled pork from one of our heaping pulled pork platters (It’s also a great recipe if you have leftovers from OCBC catering). After a little tinkering (and a lot of sampling) to get it just right, we’ve come up with the ultimate fusion of barbecue and Mexican cuisine. Try it the next time you have people over for a Summer get-together and watch people freak out about how delicious these are.
Grilled Pulled Pork Quesadilla
- 4 - 12" flour tortillas
- 2 cups shredded mozzarella cheese
- 1 cup pulled pork
- ¼ cup chopped cilantro
- 2 Tbs chopped red onion
Rosemary Ranch BBQ Sauce
- 4 oz Old Carolina Classic Sweet BBQ Sauce
- 4 oz ranch dressing
- ½ Tbs crushed rosemary
- OCBC BBQ Rub
- Sour cream
Directions:
- Evenly spread shredded cheese over half the tortilla. Top with pulled pork, red onion and cilantro. Drizzle with Rosemary Ranch BBQ Sauce. Fold Tortilla and sprinkle with OCBC BBQ Rub.
- Grill tortillas until cheese is melted. (Approx 3 minutes per side.)
- Cut into wedges. Drizzle with Rosemary Ranch BBQ Sauce. Serve with a side of sour cream.
- Enjoy.

Cleveland Ave location (inside the 44th St. Fishers Foods) Now Open Did you know the newest addition to the OC line up features the same, full menu of hickory smoked barbecue (prepared on site) we serve up at our other restaurants? It has 62 seats for dine-in eating and is open 7 days a week from 10:00 am to 9:00 pm.
