What is Calabash?

Calabash is a little town in North Carolina, just above the South Carolina border. For generations, fishing boats have lined up at the docks to bring their daily catch. Dockside and just minutes in all directions are the town’s seafood restaurants; ready to snatch up this fresh seafood and prepare it in a manner that families have honored for decades.

While you’ll find Calabash-style eateries scattered throughout the Carolinas, authentic Calabash is found in only one place.

Legend has it that Calabash-style started with “fish camps.” Simple get-togethers held outdoors with friends and family featuring fresh fare pulled right from the docks. Oysters, shrimp and fish prepared on the spot.

Instead of using flour to batter and fry the seafood, corn meal stepped in. The texture and flavor was out of this world. So much so, that the word spread. Calabash became synonymous with this unique way of preparation. Entertainer Jimmy Durante is said to have been a huge fan and is believed to help spread the gospel of Calabash throughout the country. He would end his radio shows with a tribute to a friend and Calabash restauranteur: “Goodnight Mrs. Calabash. Wherever you are.”

Droves of tourists flocked to the area. The charming fishing village became the “The Seafood Capital of the World.”

The essence of Calabash is still alive. Generations of families continue the mouth-watering recipes that landed them on the map.
