TWO OLD FRIENDS WITH CAROLINA ON THEIR MINDS.

That’s how the journey of Old Carolina began. Over 20 years ago, high school buddies Brian Bailey and Tim Hug discovered a world of sights, aromas, and tastes on a road trip to “The Cradle of Q” — the Carolinas. They discovered a not-so-secret world where recipes and techniques have been passed down through the generations in smokehouses, pits, and shacks. They fell in love with the mystique and the method, so Brian and Tim decided to bring Carolina low and slow BBQ up north to their native Ohio.

FROM FIRST PLACE
TO OUR OWN PLACE.

Through years of road trips and backyard smoking, Brian and Tim learned their craft one hickory log at a time. And in 2003, they perfected the Carolina low-and-slow cooking methods on the competition barbecue circuit.

Racking up the wins and awards — Best Barbecue, Best Ribs, Best Pulled Pork, Best Sauce, Best Chicken — showed them there was a true hunger for authentic Carolina BBQ outside the South. Recognition, awards, and a devoted fan base quickly followed. In 2006, they opened the first two Old Carolina restaurants in Massillon and Canton, Ohio. And soon, Brian and Tim had a big hit on their hands by putting their passion in BBQ lovers’ hands.

Soon after, the first two locations became a hit, Brian and Tim met like-minded people looking for a chance to grow the Old Carolina brand and bring community spirit to their towns. With a robust franchising program, Old Carolina Barbecue has grown to 9 locations in Northeast OH and Altoona, PA, with more on the way.

And although their competition days are behind them, their low-and-slow barbecue is still racking up the wins. They’re proud to have been listed as one of the “Top Ten BBQ Chains in America” in USA Today.

They’re determined to be a charitable and socially responsible partner in the local communities where we live and operate. Old Carolina proudly partners with schools, first responders, and non-profit organizations. Meal donations, charitable giving, and a 10% discount on individual meals to first responders and military personnel are just some of the ways we give back.

Brian and Tim took all their Carolina experiences to heart. They were determined to recreate the technique they saw — but also the warmth they felt. Which is why we put genuine hospitality at the center of Old Carolina Barbecue.

Everyone’s welcome at Old Carolina, and when you walk through the door you’re greeted by a smiling crew member ready to take your order. And with our “love at first bite or we’ll make it right” guarantee, we’ll do what it takes to ensure your meal is extraordinary.
